Vanilla sudoku is a (somewhat pejorative) term for ordinary 9x9 sudoku (single grid, 3x3 nonets, no extra constraints) or, to a lesser extent, a larger-grid or multi-grid with no additional constraints (such as killer, jigsaw, diagonal, etc.). It is used to differentiate it from all the many sudoku variants that have been devised since sudoku was originally invented.

Personally, I like "vanilla" sudoku just as well as the variants. A vanilla 9x9 is perfect when I have 5-10 minutes to kill. I like the variants for breaking up the monotony, and the multi-grids to keep me busy for longer periods of time.

When I named it I was being totally pejorative.

To be precise:

Vanilla means using givens - it can be NC etc.

Plain Vanilla is just givens (but perhaps X).

Plain Killer is just cages (perhaps an X) - an assassin is a very hard plain killer.

Killer is any Sudoku using cages - however this forum has a more limited definition which I am always trying to expand.

Cheers

Maurice
